This Caramelized Onion and Sweet Potato Galette has a few optional shortcuts but the end result is absolutely delicious and definitely gives all the fall flavors and feels. The caramelized onions and cooked in butter with a few splashes of apple cider to help bring out the sweetness of the onions and help them caramelize a bit faster. The sweet potatoes get soft and golden while your galette cooks and the goat cheese on top is the perfect tangy flavor to round out this delicious and easy-peasy galette. The other day I asked Topher what recipe I make is his favorite, and he actually said galette which surprosed me. He said he loves when I make a galette because no one else has ever made him a galette, he also loves that it can be sweet or savory and it’s not too much pastry. Since cooking is one of the ways I show love, I guess there are many more galettes in my future, haha! Soon folks will be asking you to make a galette for them too!

What you’ll need for this Caramelized Onion Sweet Potato Galette:

  • Pie crust (you can use store-bought!)

  • Butter

  • Onions

  • Olive oil

  • Apple cider

  • Sage

  • Sweet Potatoes

  • Goat cheese

  • Thyme

  • Chili Flakes

How to make Caramelized Onion Sweet Potato Galette:

First off, you can use store-bought pie crust or puff pastry or you can make your own pie crust, totally your choice! I like having shortcuts when time or energy is lacking. If you’re using store-bought pastry, I used two pie shells to make sure it rolls out wide enough.

Start by caramelizing your onions. In a skillet, melt butter and olive oil over medium heat. Add in your sliced onions and let cook until translucent, about 8 minutes. Pour in the apple cider and add the thyme, chili flakes, and sage. Let your onions cook, stirring occasionally until they are a deep brown color, about 15 minutes.

Meanwhile, roll out your dough into a 9 or 10-inch round. Spread the caramelized onions on the rolled-out pastry, leaving a 2-3 inch border around the edges. Layer the thinly sliced sweet potatoes on top of the caramelized onions. Scatter the goat cheese on top and drizzle with olive oil. Fold up the edges of the pastry around the filling and brush the pastry edges with egg wash.

Bake at 400ºF for 30-35 minutes or until the pastry is golden brown and the sweet potato is softened. Slice, serve, and enjoy!

Caramelized Onion Sweet Potato Galette

Ingredients
2 store-bought pie crusts (or homemade pie dough)
2 tablespoons butter
2 tablespoons olive oil
3 cups thinly sliced white onions
1/4 cup apple cider
1 tablespoon each chopped thyme and sage
1-2 teaspoons chili flakes (depending on spice preference)
1 sweet potato, thinly sliced
1/4 cup goat cheese, crumbled
1 egg, whisked
salt and pepper to taste

Instructions:
1. Preheat your oven to 400ºF. Line a baking sheet with parchment paper.
2. In a skillet, melt butter and 1 tablespoon of olive oil over medium heat. Add onions and cook until translucent, about 5 minutes.
3. Pour in the apple cider and add the herbs and chili flakes and cook for another 15 minutes or until the onions are deep brown. Season to taste with salt and pepper.
4. Meanwhile, roll out the pie dough into a 9 or 10-inch circle. Place pastry on the parchment-lined baking sheet.
5. Spread the onions on the pastry leaving a 3-inch border around the edges. Layer the sliced sweet potato on top of the onions. Crumble the goat cheese on top of the sweet potatoes and drizzle with remaining olive oil.
6. Fold the edges of the pastry up around the filling. Brush with whisked egg. Transfer to the oven and bake for 30-35 minutes or until golden brown.
7. Slice, serve and enjoy!
