Hands up if September feels like the busiest month of the year! I know it feels like September is flying by and by the end of the day, I need the easiest meal ever. I’m really determined to give you as many one-pan and one-skillet recipes as I can to make your dinnertime a breeze and clean-up super easy. This Spicy Sausage and Kale Pasta is absolutely delicious and is made in 20 minutes.

This meal is super well-rounded, carbs from the pasta, protein from the spicy Italian sausage, and lots of veggies from loads of kale. You may look at the recipe and think, Woah, that’s a ton of kale. Kale just like spinach wilts down so much, so you’ll start with a lot but by the time it cooks down, it will be the perfect amount.

What you’ll need for this Spicy Sausage and Kale Pasta:

  • Mild or Spicy Italian Sausage

  • Kale

  • Garlic

  • Parmesan cheese

  • Chili flakes

  • Salt and pepper

  • Pasta

How to make Spicy Sausage and Kale Pasta:

This pasta comes together in under 30 minutes. Bring a pot of salted water to a boil for your pasta. Once boiling, add your pasta to the water.

Meanwhile, slice your sausages into 1/2 inch pieces, alternatively, you can take the sausage casing off and break up your sausage as it cooks. Add the sausage to a large pan and let cook for about 8 minutes, or until the sausage is browned. Add in the sliced garlic and kale. Season with salt and pepper.

Add your cooked pasta to the pan and toss to combine. Add 1/2 cup of the pasta-cooking water to the pan to loosen everything up, feel free to add more pasta water if you want it to be a bit saucier. Stir in the grated parmesan cheese and serve!

Spicy Sausage and Kale Pasta

Ingredients
4 sausages (spicy or mild Italian work)
5 cups kale, destemmed and chopped
3 cloves garlic, sliced
1 box of pasta (about 454 grams) (any pasta will work, I like rigatoni)
1 cup grated parmesan cheese
salt and pepper, to taste

Instructions:
1. Bring a pot of well-salted water to a boil and cook your pasta.
2. Meanwhile, slice your sausages into 1/2 inch pieces. Add to a large skillet over medium heat. Cook for 8 minutes until the sausages is browned.
3. Add the garlic and kale and stir to combine. It seems like a lot of kale, but it wilts down a lot.
4. Once the pasta is cooked, add it to the skillet along with 1/2 cup pasta cooking water. Stir to combine and add more water to loosen it up, if need be.
5. Stir in parmesan and serve! Enjoy.
