One of my favourite things about fall is slow-cooked, one-pot, braised meals, and this One Pot Peanut Coconut Chicken is all those things and way more. This cozy meal is so delicious and it’s perfect for Fall and Wintertime when you want something creamy, nourishing, healthy, and yummy. One of the really great things about this recipe is it can be made from start to finish in less than 40 minutes or you can simmer the chicken in the coconut peanut sauce for up to an hour and then add the broccoli 15 minutes before serving.

This Peanut Coconut Chicken with Broccoli can be made in the slow cooker. The key to this dish is to stir in the peanut butter near the end of cooking regardless of if you cook this dish stovetop or in the slow cooker.

You’re going to love the blend of flavours in this dish, it’s inspired by the spicy peanut dipping sauce that often comes with Fresh Springrolls. The mix of Thai Curry Paste, creamy coconut milk, and salty peanut butter is absolutely divine.

What you’ll need for this One Pot Peanut Coconut Chicken:

  • Boneless, skinless chicken thighs or breasts

  • Thai curry paste

  • Sesame oil or olive oil

  • Shallot

  • Garlic

  • Canned coconut milk

  • Peanut butter

  • Soy sauce/tamari

  • Fish sauce

  • Lime juice

  • Sambal or chili garlic sauce

  • Broccoli

  • Rice for serving (optional)

How to make One Pot Peanut Coconut Chicken with Broccoli:

This is one of my favourite one-pot meals, it’s loaded full of flavour, it’s pretty darn healthy and super comforting.

Start by adding your chicken to a bowl and coat it in the curry paste, diced shallot, garlic, and half the sesame oil. This is kind of like a super simple marinade, so you can let the chicken sit in the curry paste for 5 minutes or up to 12 hours.

Let’s get cooking. In a dutch oven or pot that you can cover over medium-high heat, add the remaining sesame oil. Add the chicken to the pot and let it cook for 4-5 minutes or until it’s browned and lifts easily from the pan, turn the chicken over and cook for another 5 minutes.

Reduce heat to medium-low. Stir in the coconut milk, tamari/soy sauce, fish sauce, and sambal/chili garlic paste. Let that cook for 15-20 minutes. Add in the peanut butter and broccoli and cook for 10 minutes or until the broccoli is softened and the chicken is cooked through. Stir in the lime juice.

You’ll end up with a lot of extra sauce, so I love to serve this dish with rice to soak up the delicious sauce.

To serve, add rice to a bowl, top with chicken, broccoli, and lots of sauce. Garnish with cilantro, lime wedges and chopped peanuts. Serve and enjoy!

Ingredients
1 1/2 lbs boneless skinless chicken breasts or thighs
2 tablespoons Thai curry paste
1 shallot, diced
2 cloves garlic, minced
1 tablespoon grated ginger
1/4 cup sesame oil, divided
1 can full-fat coconut milk
1 teaspoon fish sauce
2 tablespoons tamari/soy sauce
2-4 tablespoons sambal/chili garlic sauce, depending on spice preference
1/2 cup smooth peanut butter
4 cups broccoli florets
1 tablespoon lime juice
cilantro, chopped peanuts, lime wedges, for garnish
cooked rice, for serving

Instructions:
1. In a bowl, stir together curry paste, 2 tablespoons sesame oil, diced shallot, minced garlic, and grated ginger. Add in chicken and toss to coat. Set aside for 5 minutes or let marinate for up to 12 hours.
2. Heat the remaining 2 tablespoons of sesame oil in a dutch oven or large pot with a lid over medium-high heat. Sear chicken for 5 minutes or until browned and lifts easily from the pan and cook on the other side for 5 minutes.
3. Stir in coconut milk, tamari, sambal, and fish sauce. Simmer for 15 minutes. Stir in the peanut butter and add the broccoli. Cook for another 10-12 minutes or until the broccoli is cooked and the chicken is cooked through
4. Stir in the lime juice. Serve with rice. Garnish with cilantro, lime wedges, and chopped peanuts and enjoy!
