Easy Apple Strudel

Apple Strudel is one of the best fall desserts. The super crisp, flakey pastry combined with the cinnamon-sweet apple filling topped off with a scoop of vanilla ice cream makes for an irresistible dessert. This Easy Apple Streudel is definitely not the authentic way of making this traditionally German dessert, but it’s easy, delicious, and tastes like Fall. Whether you have a dinner party coming up or just a Sunday night dinner, this Easy Apple Strudel is sure to be a hit.

In Fall, we always debate if we’re team pumpkin or team apple. I love both flavours and think we should enjoy them both, why choose?! Easy Apple Strudel is the perfect way to use all the apples that you picked at the orchard and it’s such a wonderful dessert to celebrate Autumn.

What you’ll need for this Easy Apple Strudel:

  • Phyllo pastry

  • Melted butter

  • Apples

  • Cinnamon

  • Sugar

  • Ice cream for serving

How to make Easy Apple Strudel:

When I titled this recipe Easy Apple Strudel, I meant it, this recipe is really easy to make!

Start by preparing your pastry. Roll out your phyllo pastry and take one sheet and lay it on the counter. Cover the remaining sheets with a slightly damp towel so it doesn’t dry out. Brush your sheet of phyllo pastry with melted butter, lay another sheet of phyllo on top and brush with melted butter. Layer 5 sheets of pastry brushing each with butter. Set aside the phyllo.

In a bowl stir together the thinly sliced apples, sugar, lemon juice, and cinnamon.

Pour the apples into the center of the layered phyllo pastry. Fold over the edges of the pastry so you end up with a closed package of apples. Transfer to a parchment-lined baking sheet and brush the top with a whisked egg. Sprinkle with coarse sugar and bake for 400ºF for 25-30 minutes or until golden brown.

Transfer to a serving plate, and let cool slightly before serving with a scoop of ice cream.

Easy Apple Strudel

Ingredients
5 sheets phyllo pastry
1/4 cup melted butter
2 cups peeled and thinly sliced apples (I love using Mutsu, but Granny Smith work well too)
1/2 cup sugar
3 tablespoons lemon juice
1 teaspoon cinnamon
1 egg, whisked
coarse sugar, for sprinkling

Instructions:
1. Preheat your oven to 400ºF. Line a baking sheet with parchment paper.
2. Lay a piece of phyllo pastry on your counter, brush with butter, layer another sheet of phyllo on top, and brush with butter. Repeat with the 5 sheets of phyllo. Set aside.
3. In a bowl, stir together the sliced apples, sugar, lemon juice, and cinnamon.
4. In a small bowl, whisk the egg.
5. Place the apples in the center of the phyllo pastry in a log shape leaving 3 inches of pastry around. Fold up the long side of the pastry over the apples, brush with egg then fold the other long side of pastry on top. Brush the long ends of the pa try with egg and fold them up so you end up with a closed package.
6. Transfer the apple strudel onto the prepared baking sheet with the folded side down.
7. Bake for 25-30 minutes or until golden brown. Transfer to a serving tray, let cool slightly, slice and enjoy!
