I know bread can be a bit intimidating, but the truth is you just have to start making it, and through trial and error, you’ll become a bread-baking pro! Bread is really all about feel. It’s a fine balance between not using enough flour and using too much, not kneading it enough, and kneading it too much. But this recipe is super simple and thanks to the cheesy, garlicky filling, even if you under-proof your knots, they’ll still taste so so good!

How to make Cheesy Garlic Knots:

It’s always amazing how simple ingredients can become such a delicious, comforting thing like these Cheesy Garlic Knots.

I always “bloom” my yeast, even if I’m using Instant Yeast. To bloom your yeast, add the yeast, sugar and warm water to a bowl. Let it sit for 5-10 minutes until it’s bubbling and frothy.

Once your yeast is active, add in the flour, oil, egg, and salt. Mix everything together. I use my stand mixer with the dough hook, but you can also use a wooden spoon and then knead the dough until it forms a ball that isn’t sticky anymore. If you’re using a stand mixer, start low and slow and gradually increase the speed. Mix for 5 minutes or until the dough is wrapping around the hook in a ball and it’s pulling away from the sides of the bowl.

Cover the bowl with a towel and let rest for an hour or until it’s doubled in size.

Make your butter filling. Mix together softened butter, minced garlic, and dried Italian seasoning.

Punch your dough down, roll it out on a floured surface into a 1/2-inch thick rectangle.

Spread the butter mixture over the dough and then sprinkle with grated cheese. More cheese is always better!

Slice your dough into 12 1-inch strips. Roll the strips up halfway then turn the knot a quarter turn (80º) and roll the rest of the way. They do not have to be perfect at all!

Place your knots on a baking sheet and cover again with a towel. Let rise for another hour or until doubled in size and then egg wash and bake until golden brown and perfect!

Enjoy as a sandwich bun, on their own, or dip into your favourite bowl of soup or chili!

Cheesy Garlic Knots

Author: Elizabeth
Servings: 12 knots

Ingredients
1/2 cup warm water
1 teaspoon instant yeast
2 tablespoons sugar or honey
2 tablespoons + 1 teaspoon olive oil
2 eggs
2 cups flour
1/2 cup softened butter
1 clove minced garlic
1 teaspoon dried Italian seasoning

Instructions:
1. Stir together the warm water (not hot!), yeast, and sugar. Let sit 5 minutes or until bubbling and frothy.
2. Add the oil, 1 egg, and flour to the yeast mixture. Mix together with the dough hook of a mixer. Mix until the dough makes a ball and wraps around the hook and pulls away from the sides of the bowl, about 5 minutes.
Alternatively, mix with a wooden spoon until a shaggy dough forms and then knead on a floured counter for 5 minutes until it's a smooth, not sticky ball of dough.
3. Add 1 teaspoon of olive oil to the bowl, coat the dough in oil and cover with a tea towel. Let rest in a warm place for 1 hour or until doubled in size.
4. Make the filling by stirring together butter, garlic, and herbs.
5. Roll the dough into a 1/2-inch thick rectangle on your counter. Spread butter mixture all over, then sprinkle the cheese on top.
6. Slice the rectangle into 1-inch strips. Roll the strips up halfway, then turn halfway and continue rolling to create a knot-like bun. Place on a baking sheet, cover with a towel, and let rise until doubled in size or about an hour.
7. Uncover, brush your buns with an egg wash, and bake your knots at 400ºF for 20 minutes or until golden brown. Serve warm and enjoy!
