Creamy White Chicken Chili

I don’t think there’s such a thing as too many chilli recipes, just like I don’t think there’s such a thing as too many taco recipes. This is the third chilli recipe that I’m publishing and I’m sure it won’t be the last! This Creamy White Chicken Chili is my current favourite chilli recipe. I love that it’s spicy, creamy, and so so delicious. I don’t know about you but in the winter I get really bored of food, but this chilli just tastes a bit different and is very very yummy.

However you look at it, this Creamy White Chicken Chili is delicious. And such a nice bowl to warm up to on cold fall/winter nights. What’s great about this chilli is how quick and easy it is. You can choose to make it in one pot in less than an hour on the stove. Or cook it low and slow in the crockpot.

The details

Start by cooking up the onion and vegetables until they smell fragrant. Then add the spices to toast them up and activate their deliciousness! Then you’ll add the diced tomatoes, stock, and canned green chilis.

At this point, I like to add black or white beans. As well as the chicken, simply let the chicken simmer until it’s cooked through and shreds easily.

While the chicken is cooking, take the cream cheese and let it come to room temperature. The cream cheese is what makes this a creamy chili. You only need a little, but it really makes the chili just that much more delicious.

Once the chicken is cooked, pull it out and shred it.

Next, stir the cream cheese into the chili and finish it up with that shredded chicken and some corn.

To make this recipe in the slow cooker, add all the ingredients except the cream cheese and corn to the slow cooker and set to cook on high for 6 hours or low for 10 hours. Remove the chicken at the end of cooking and shred it with two forks. Stir in the cream cheese and corn at this point and add the chicken back in. Stir to combine and enjoy!

What you need for Creamy White Chicken Chili:

  • Olive oil: to sautee the veggies in.

  • Onion: is part of the veggie base for this chili.

  • Garlic: everything is better with garlic.

  • Canned green chilis: add spice and vibrancy.

  • Canned diced tomatoes: add substance to this chili.

  • Black beans or white cannellini beans: for extra protein, fibre, and yumminess.

  • Cream cheese: adds a creamy, velvety texture.

  • Spices: I like using cumin, smoked paprika, chili powder.

  • Chicken breasts: make this a white chicken chili! You can make it plant-based by adding an extra can of beans and omitting the chicken.

  • Chicken broth/stock: adds flavour.

  • Corn: adds depth of flavour and give a little bit of sweeteness.

  • Sea salt and pepper: because life is better with proper seasoning.

Creamy White Chicken Chili

Ingredients
1 tablespoon olive oil
1 cup onion, diced
3 garlic cloves, minced
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
1 796oz can diced tomatoes
1 4oz can diced green chilies
2 boneless skinless chicken breasts
1 14oz can black beans or white cannellini beans
2 cups chicken broth, you can use more or less depending on how thick you like it
1/4 cup cream cheese
1 cup frozen corn kernels
sea salt and pepper

Instructions:
1. Heat the olive oil in a Dutch oven over medium heat. Add the onions, garlic and spices and cook for 5-7 minutes or until onions are translucent and spices are fragrant.
2. Add the canned tomatoes, canned chilies, beans, and chicken stock. Carefully add the chicken breasts and let the mixture simmer for 25-30 minutes or until chicken is cooked.
3. Remove the chicken from the pot and shred it using two forks. Add the chicken back to the pot. Stir in the cream cheese and corn. Season with sea salt and pepper.
4. Serve your chili with a wedge of lime, fresh herbs, grated cheese, tortilla chips, and sliced avocado. Enjoy!
