Grilled Chicken Caprese Sandwich
I’m pretty sure sandwiches are one of the quintessential summer foods along with ice cream, watermelon, and salads, of course! This Grilled Chicken Caprese Sandwich is so delicious, it’s chockful of deliciousness like grilled chicken, roasted tomatoes, crispy romaine lettuce, melted mozzarella and spicy mayonnaise. Load everything onto a ciabatta or any crusty bread roll. You can also make this sandwich with ripe, juicy sliced tomatoes instead of roasted tomatoes, it totally depends on if tomatoes are in season when you’re making this!
What you’ll need for these Grilled Chicken Caprese Sandwich:
Olive oil
Boneless, skinless chicken breasts or thighs
Pesto
Lemon juice
Mozzarella
Tomatoes
Romaine lettuce
Ciabatta buns
Mayonnaise
Sriracha
How to make Grilled Chicken Caprese Sandwiches
The great thing about these sandwiches is everything can be prepared in advance and then you just assemble and enjoy! Start by marinating your chicken in pesto and lemon juice, let that sit for at least 10 minutes or up to 12 hours.
While your chicken is marinating, roast your tomatoes. Place your tomatoes on a baking sheet, drizzle with olive oil and season with salt and pepper. Pop them in the oven and roast your tomatoes for 25-30 minutes or until they are blistered and cooked down.
To cook your chicken, you can either bake it in the oven or grill it. If you’re baking your chicken, place on a baking sheet and cook at 400ºF for 15-20 minutes. To grill your chicken, preheat your grill to 400ºF and place your chicken on the grill. Cook for 8-10 minutes per side. In the last two minutes, top your chicken with sliced mozzarella so that it melts
In the last few minutes of the chicken cooking, grill your buns until they’re golden brown and toasted.
Make your sriracha mayonnaise by stirring the mayonnaise and sriracha together.
Now it’s time to assemble your sandwich! Slather the sriracha mayonnaise on the toasted bun, place your cheesy chicken on the bottom of the bun, then layer on the roasted tomato and romaine lettuce, top with the other half of the bun and enjoy!

Ingredients
4 ciabatta buns
2 skinless, boneless chicken breasts or thighs
2 tablespoons pesto
2 tablespoons lemon juice
4 roma tomatoes, halved
1 tablespoon olive oil
4 slices mozzarella ball (1/8 inch thick slices)
romaine lettuce
1/2 cup mayonnaise
2 tablespoons sriracha
Instructions:
1. In a bowl, mix together the pesto and lemon juice. Add your chicken to this mixture and let marinate for at least 20 minutes.
2. Meanwhile, roast your tomatoes. Preheat oven to 400ºF. Place the tomatoes on a baking sheet and drizzle with olive oil. Roast for 25-30 minutes or until the tomatoes are blistered and broken down.
3. Grill your chicken at medium-high heat for 7-10 minutes per side or bake your chicken at 400º for 15-20 minutes or until cooked through.
4. In the last couple minutes of cooking the chicken, grill or toast the buns until golden brown. Top the chicken with a slice of cheese and let it melt. Remove buns and chicken and set aside.
5. Make the sriracha mayo but stirring together mayonnaise and sriracha.
6. Assemble your sandwiches, slather the toasted bun with sriracha mayo. Layer on a roasted tomato, the grilled cheesy chicken, and romaine lettuce. Slather the top of the bun with more sriracha mayo and top the sandwich. Serve and enjoy!
