I’m always looking for the easiest and most delicious desserts to make for Valentine’s Day. I mean, sure you can make a super fancy, involved dessert but since Valentine’s Day is on a Tuesday this year, I think simple is better and these mug cakes are still super special and so delicious!! These Chocolate Molten Mug Cakes are great any day of the year, if you're having a chocolate craving, these will definitely satisfy your need for chocolate!

Truth is, I’m not usually someone who uses the microwave. In fact, for many years we actually didn’t have a microwave. We just got a microwave when we renovated our kitchen. I don’t often find many uses for it, but sometimes it’s a handy kitchen appliance. And you know something? It does have the ability to create a delicious chocolate mug cake within just 5 minute’s time. If there was ever a reason to own a microwave, this cake recipe is it.

This deep-dish style cake in a mug requires just one coffee mug, simple pantry staple ingredients, and takes almost no effort or time to make. There are swirls of melted chocolate, hints of coffee and every bite is truly delicious. Enjoy this personal-sized cake warm, right out of the microwave, with a scoop of ice cream.

What you need for Five Minute Chocolate Molten Mug Cake:

  • olive oil

  • egg

  • milk

  • flour

  • cocoa powder

  • baking powder

  • salt

  • instant coffee granules

  • chocolate

How to make Five Minute Chocolate Molten Mug Cake:

I cannot think of a better or easier cake recipe. You probably have all the ingredients in your pantry, I love this recipe because it doesn’t have any fancy ingredients.

Start with your favourite microwave-safe mug. Add your wet ingredients, oil, egg, milk, and sugar right to your mug and mix them together. Then stir in your dry ingredients, the flour, cocoa powder, baking powder, and salt. I like to sift my dry ingredients to avoid any clumps.

Once your batter is all mixed together, place two squares of dark chocolate into the center and gently press them into the batter.

Microwave the mug cakes for 90 seconds.

I will say that that every microwave is different, so the cooking time is a little tricky. That said, I tested this on two different microwaves and found 90 seconds to be just the right amount of time. You may need to adjust slightly by fifteen seconds, give or take.

Five Minute Chocolate Molten Mug Cake

Ingredients
3 tablespoons olive oil
1 egg
3 tablespoons milk (regular or dairy-free works!)
3 tablespoons sugar
2 tablespoons cocoa powder
1/4 cup flour
1/4 teaspoon baking powder
1/4 teaspoon sea salt
2 squares dark chocolate
ice cream, for serving

Instructions:
1. In a microwave-safe mug, mix together oil, egg, milk, and sugar.
2. Sift and combine the dry ingredients (cocoa powder, flour, baking powder, sea salt, instant coffee) with the wet ingredients.
3. Gently press the chocolate squares into the centre of the batter.
4. Microwave for 1-2 minutes, I find 90 seconds is the perfect amount of time, but all microwaves vary. You want the centre to still look a bit undercooked but the sides should pull away from the mug.
5. Serve warm with a scoop of ice cream and enjoy!
