Sheet Pan Salmon with Whipped Feta

Here are a couple of things you should know about me, I like easy meals with minimal clean-up, and I like to eat really flavourful food. Now, you may think that these two don’t go hand in hand, but I’m here to prove you wrong with this one sheet pan salmon dinner. It’s pretty magical that you can cook an entire dinner on one big sheet pan. Now, that’s the easy part, the flavourful part comes with the creamy, salty feta that’s whipped to perfection and compliments this entire meal. This easy dinner is really healthy and is absolutely perfect for a busy weeknight.

This recipe is absolutely not rocket science or anything revolutionary. To be honest, I didn’t even know if it was worth posting because it’s so straightforward, but, not every recipe needs to be complicated and this meal is so flavourful, that I figured you need a simple and freaking delicious weeknight meal.

What you’ll need for this sheet pan dinner:

  • Salmon: is the protein of this dinner. Rainbow trout, chicken or even chickpeas could replace the salmon.

  • Veggies: any veggies will do but I love, asparagus, broccoli, cauliflower, and baby potatoes! Zucchini, peppers, eggplant, and tomatoes are great options as well.

  • Feta: is the base of the sauce.

  • Greek yogurt: helps to make the sauce super creamy.

  • Olive oil: helps the veggies get nice and crispy.

  • Lemons: brightens the salmon and the feta.

  • Garlic: garlic powder is used on the fish and veggies and fresh garlic is used in this whipped feta.

  • Dill: compliments the fish perfectly.

The Details

This easy, peasy dinner comes together in a flash. Start by parboiling your potatoes so they cook quickly in the oven. Then, spread all of your veggies around the perimeter of your baking sheet. Drizzle everything with olive oil, salt, pepper, and garlic powder and toss to cost everything evenly. Place your salmon filet in the middle of the sheet pan. Season with salt, pepper, and garlic powder and top with lemon slices and fresh dill. Transfer to the oven and bake for 20-25 minutes, depending on the thickness of your fish.

Meanwhile, make your whipped feta. In a blender or food processor, combine feta, lemon juice, olive oil, yogurt, and salt and pepper. Blend it all up until it’s super smooth and creamy.

To serve this dinner, spoon your whipped feta onto plates, top with salmon and veggies. Garnish with a wedge of lemon juice and some fresh dill. Enjoy!

Sheetpan Salmon with Whipped Feta

Servings: 4

Ingredients
1 large or 4 small salmon filets (I budget 3-4oz per person)
2 cups baby potatoes
2 cups broccoli florets
1 cup cauliflower florets
1 bunch asparagus (about 20 spears)
2 tablespoons olive oil
1 lemon, sliced into rounds
1 teaspoon garlic powder
1/4 cup fresh dill
sea salt and pepper
Whipped Feta
200 gram container feta
1/4 cup plain Greek yogurt
1 tablespoon olive oil
2 tablespoons lemon juice
1 garlic clove
pepper, to taste

Instructions:
1. Preheat oven to 400ºF and line the baking sheet with parchment paper.
2. Place potatoes in a pot and cover with water. Bring to a boil and cook for 8-10 minutes or until a knife inserts easily into them. Drain.
3. Place potatoes, broccoli, cauliflower, and asparagus on the baking sheet. Drizzle with two tablespoons olive oil, 1 teaspoon garlic powder, and sea salt and pepper. Toss to coat.
4. Move the veggies to the perimeter of the pan so there's room in the centre for your fish. Place salmon in the centre of your pan. Season with 1 teaspoon garlic powder, sea salt, and pepper. Top with lemon slices and dill.
5. Transfer to the oven and cook for 20-25 minutes or until the fish is opaque and flakes easily.
6. Meanwhile, make the whipped feta. Combine feta, yogurt, olive oil, lemon juice, and garlic in a blender or food processor. Blitz until smooth. Season with salt and pepper to taste.
7. To serve, spoon the whipped feta onto plates, the top the feta with salmon and veggies. Garnish with fresh dill and lemon wedges. Enjoy!
