Garlic Parmesan Leek Spirals

Garlic Parmesan is my vibe lately and I’m definitely not complaining, the toasty garlic with salty parmesan is heavenly and these spirals of sauteed leeks, garlic, and parmesan wrapped in puff pastry wrapped are exactly what you need to make this holiday season. I have been loving leeks lately, they are totally overlooked in my opinion. Leeks are delicious sauteed and make a great filling for quiche, omelets, and stuffing. So, if you’re only eating leeks in leek and potato soup, you’re missing out!

If you ask my mum, she’s sort of anti-appetizer on Christmas because she worries that you’ll fill up on appetizers before the big turkey dinner. Totally fair concern but in my books, the appetizers are the best part, especially these spirals! But, unlike many appetizers, these little puff pastry spirals are pretty light so they won’t fill you up before dinner, so everyone wins!

These spirals are delicious as an appetizer, but they also pair perfectly with a bowl of soup or chili! You can make them bigger and more bun-like or make them bite-sized depending on how you want to enjoy them. Make sure to save this recipe for your next holiday party or gathering!

How to make Garlic Parmesan Leek Spirals:

These spirals are delicious and pretty easy to make, I always opt for pre-made puff pastry as a bit of a shortcut. Defrost your puff pastry ahead of time so you’re all set to make these little bites.

The first step is making your filling. To make the filling, you’ll sauté your sliced leeks in some butter and olive oil, and season the leeks with sea salt, pepper, and Italian seasoning. Cook your leeks until they are very soft, this will take about 10 minutes. Transfer your leeks into a bowl and reuse your skillet to make your garlic butter.

In the same skillet, melt the remaining butter and add the grated garlic. Cook the butter over medium heat for 3-4 minutes to take a bit of the edge off of the raw garlic.

Roll your puff pastry out into a 10-12 inch square. Brush the puff pastry with the garlic butter mixture, reserving a couple of tablespoons to brush the spirals with before baking. Scatter the cooked leeks evenly on the pastry. Evenly spread the grated parmesan cheese over top of the leeks. Roll the pastry up tightly into a spiral, like cinnamon buns. Slice the buns into 1-2 inch rounds, depending on how big you want to buns.

Transfer the spirals into a muffin tin, the muffin cup walls will help your spirals stay closed and keep their shape. Brush the tops with the leftover garlic butter. Bake your spirals at 400 for 6 minutes then reduce the heat to 350 and continue to cook for 10 minutes or until the spirals are golden brown.

Let your spirals cool slightly before removing them from the tin. You can either serve these delicious bites while they are warm or serve them cool!

Garlic Parmesan Leek Spirals

Servings: 12 spirals

Ingredients
1/3 cup butter
1 leek, thinly sliced (white part only)
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon each sea salt and pepper
3 cloves garlic, minced
1 sheet puff pastry
1/2 cup grated parmesan cheese

Instructions:
1. Preheat oven to 400ºF. Melt 1 tablespoon butter and 1 tablespoon olive oil in a skillet over medium heat. Add sliced leeks, salt, pepper, and Italian seasoning.
2. Cook the leeks over medium heat until very wilted and translucent, about 7 minutes. Transfer to a bowl and set aside.
3. Add the remaining butter to the pan that you just used. Melt the butter over medium-low heat and add the minced garlic. Let simmer 4-5 minutes until the garlic is fragrant.
4. Roll the puff pastry into a 12 inch square. Brush the pastry with the garlic butter, reserve 2 tablespoons of garlic butter, scatter the leeks evenly over top and then sprinkle the parmesan cheese evenly.
5. Roll the filled pastry up into a tight spiral. Slice roll into 12 rolls, each about 1 inch thick. Place the rolls in a muffin tin. Brush the tops with reserved garlic butter.
6. Bake spirals at 400ºF for 5 minutes. Reduce heat to 350 and cook for 10-15 more minutes, until the spirals are golden.
7. Remove from tin and let cool slightly before serving or let cool completely before serving. Enjoy!
