Easy Sheet Pan Chicken Fajitas

Boy, do we love tacos in this house. I think it’s safe to say that both mine and Topher’s favourites foods are tacos and honestly Mexican food is always a winner over here. I love the warm, smokey flavours and the gentle heat and spice. These Easy Sheet Pan Chicken Fajitas are made in just under 30 minutes so they are the perfect weeknight meal for a busy household. The chicken and veggies all get oiled and spiced together then cook on a sheet pan while you assemble any toppings you care for.

I also love how foods like tacos and fajitas allow for everyone to have what they want and easily customize what goes in their tacos. Say adios to the days of making multiple meals to satisfy picky eaters, fajitas give control to the picky eater which goes a long way in discovering new flavours and trying new foods.

These Sheet Pan Chicken Fajitas go really perfectly with some homemade guacamole. I also love topping them with salsa or a quick and easy pico de gallo. You can adjust the toppings to whatever you like, shredded cheese is great, lettuce and tomatoes add some crunch, a bit of sour cream or Sriracha mayo is delicious, and a squeeze of lime is just essential!

Make it like so…

The recipe couldn’t be easier! Start by slicing your chicken breasts into 1/2 inch strips. Then you’re going to slice your onions and peppers into 1/4 inch strips, you can add extra veggies to this as well. Cauliflower florets would be a delicious addition. I like to toss all the chicken and veggies into a big bowl and then add the oil and seasoning to the bowl and toss to coat everything really well. Once your chicken and veggies are seasoned, pour them onto a baking sheet and spread them evenly. Then just throw the baking sheet in the oven and let everything roast up, the onions get caramelized and sweet, the peppers get nicely browned and cooked, and the chicken gets roasted and delicious!

While your chicken and veggies are cooking, warm up your tortillas, you can even throw them in the oven in a damp tea towel to heat up! Gather your toppings, I make guac and a pico de gallo, but you can use any toppings that tickle your fancy. To make a quick pico de gallo or fresh salsa, just add 2 cups grape or cherry tomatoes, 1/4 cup red onion, 1 garlic clove, and 1/2 cup parsley or cilantro to a food processor. Pulse until it reaches a consistency that looks good to you, you can leave it chunkier or let it get really fine. Pour that into a bowl, stir in a tablespoon of olive oil and a couple teaspooons of lime juice, season with salt and pepper and enjoy.

For a quick and easy spicy lime crema, simply combine in a bowl 1/4 cup mayonnaise, 2 teaspoons lime juice, 1-2 tablespoons sriracha (depending on how spicy you want it). Stir that up and drizzle on your tacos for some heat and extra flavour!

Easy Sheet Pan Chicken Fajitas

Ingredients
4 chicken breasts, boneless, skinless, sliced
4 bell peppers, seeded and sliced
2 white onions, sliced (about 2 cups)
2 tablespoons olive oil
2 teaspoons ground cumin
1 tablespoon chili powder
2 teaspoons smoked paprika
1/2 teaspoon red pepper flakes
1/2 teaspoon sea salt
1/2 teaspoon black pepper
10-12 small/medium corn or flour tortillas
any toppings that you'd like

Instructions:
1. SEASON CHICKEN AND VEGGIES Preheat oven to 375ºF. In a large bowl, combine sliced chicken, peppers, and onions. Add the two tablespoons olive oil and all the spices to the chicken and veggies and toss well to evenly coat everything.
2. Pour chicken and veggies onto a baking sheet and spread into one even layer. Bake for 15-20 minutes or until onions are caramelized and chicken is cooked through.
3. PREPARE YOUR TOPPINGS While the chicken and veggies are cooking, heat your tortillas up either on your stove, in the oven in a clean, damp tea towel, or in the microwave. Place any desired fajita toppings in bowls.
4. Remove your chicken and veggies from the oven and transfer to a bowl. Serve everything up and everyone can make their own fajitas! Enjoy!
