Chickpea Peanut Butter Chocolate Blondies

Name a better combination than chocolate and peanut butter…I’ll wait. Are you struggling to think of one? Yeah, me too because chocolate and peanut butter reign supreme! These Chickpea Peanut Butter Chocolate Blondies are so freaking delicious, they are moist, they’re easy to make, pretty darn healthy and vegan! Say what!

The best part about these blondies is that there are zero weird ingredients involved, in fact, you probably have all the ingredients in your pantry right this second. These blondies are good for you and will definitely surprise everyone with how delicious they are. Plus these healthy chickpea blondies are vegan and gluten-free, so pretty much anyone can enjoy them! I hope you love them as much as I do.

If you’re wondering what a “blondie” is, you’re definitely not alone. A blondie is just another variety of brownies but since there's no cocoa powder in them they stay a lighter colour aka blond compared to their brown counterpart, hence the blondie term instead of brownie.

What you’ll need for these Chickpea Peanut Butter Chocolate Blondies:

  • Chickpeas: are the substance in this recipe, bind everything together and holds these blondies together.

  • Peanut Butter: add the salty, nutty delicious flavour to these blondies.

  • Maple syrup: sweetens these blondies up.

  • Chocolate chunks: because chocolate and peanut butter are a match made in heaven.

  • Baking soda: helps these blondies rise.

  • Baking powder: is another leavening agent in these blondies.

  • Sea salt: sweets are just better with a sprinkle of sea salt.

The Details

I absolutely love that this whole recipe gets made in a food processor, I mean what could be easier? You can also make these blondies in a blender, just be sure to scrape down the sides. Add the drained and rinsed chickpeas, peanut butter, baking powder, and baking soda to the food processor or blender. Blitz until super smooth. Fold in the chocolate chunks.

Line an 8x8 square cake pan with parchment paper. Pour the batter into the pan and top with extra chocolate chunks or chips. Bake at 350ºF for 20-25 minutes. Remove from oven, sprinkle with flakey sea salt and let cool for at least 20 minutes in the pan. Once mostly cooled, remove the blondies from the pan and slice into squares. Serve with a scoop of ice cream or on it’s own and enjoy!

Chickpea Peanut Butter Chocolate Blondies

Ingredients
1 can (15 ounces) chickpeas, drained and rinsed
1/2 cup peanut butter (or any nut butter)
1/3 cup maple syrup
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup semi-sweet chocolate chunks/chips (plus extra for sprinkling on top)
flakey salt for finishing

Instructions:
1. Line an 8x8 baking pan with parchment paper. Preheat oven to 350ºF.
2. To a food processor or blender, add chickpeas, peanut butter, maple syrup, baking powder, and baking soda. Blitz until super smooth.
3. Fold in chocolate chips/chunks. Pour into prepared pan and sprinkle with extra chocolate chunks.
4. Bake for 20-25 minutes until golden around the edges and a toothpick inserted into the centre comes out with a few crumbs.
5. Take out of the oven, sprinkle with flakey salt and let cool in the pan for 20 minutes before transferring to a cooling rack. Slice into squares and enjoy.
