Brussel Sprout Caesar Salad

I am about to share with the world’s best caesar salad dressing and it is the perfect dressing for any Caesar salad you want, I love this recipe which is a Brussel Sprout Caesar Salad but in the summer when we have loads of kale growing in our garden then I make this salad with kale. It’s also great with classic romaine lettuce!

This brussel sprout salad is one of my favourite ways to have brussels sprouts lately. I just use my food processor to slice them really thinly and then toss them with this epic, drool-worthy, creamy, delicious dressing. I also love using brussels sprouts because they are really sturdy so it stays crunchy even if you pour the dressing on ahead of time. This makes the best lunch with some roasted chicken or even a light dinner!

What you’ll need for this salad:

  • Brussel sprouts: thinly sliced brussel sprouts are a delicious base for this salad.

  • Mayonnaise: homemade or store-bought will work, this is how you get a creamy dressing.

  • Lemon juice: the acid helps cut through the richness.

  • Anchovies: gives you a balanced, salty, delicious dressing. You can also use capers here!

  • Garlic: adds so much flavour. I like my dressing extra garlicky, adjust to your garlic preference.

  • White wine vinegar: brightens this dressing up.

  • Worcestershire sauce: balances out this dressing perfectly.

  • Dijon mustard: adds zing and flavour.

  • Toppings: toppings are up to you but I love serving this salad with crispy bacon bits and ribbons of parmesan or if this salad is the meal, I serve it with roasted chicken for protein.

The Details

First things first, thinly slice your brussel sprouts. You’ll need about five cups of sliced sprouts, so feel free to take a shortcut and use a food processor with the slicing attachment. Otherwise, this is great knife practice!

To make your dressing combine all the ingredients in a blender or use an immersion blender and tall container. Blitz it all together until super smooth. Pour your dressing over your sprouts (or whatever greens you’re using) and top with bacon bits, roasted chicken, and of course ribbons of parmesan cheese! If you’d like this salad is also great with croutons.

Homemade croutons are easy as can be, simply slice a loaf of bread into 1/2 inch cubes, drizzle with olive oil, garlic powder, and dried Italian herb mix. Toss to evenly coat and bake at 400ºF for 12 minutes or until golden and crispy!

Brussel Sprout Caesar Salad

Ingredients
5 cups thinly sliced brussel sprouts
1/3 cup mayonnaise
1 lemon, juiced (about 1/4 cup)
2 cloves garlic
1 tablespoon white wine vinegar
1 tablespoon dijon mustard
2 anchovy filets
1 teaspoon worcestershire sauce
Parmesan ribbons, bacon bits, roasted chicken for topping (optional)

Instructions:
1. Thinly slice the brussel sprouts and scatter them on a serving tray or in a salad bowl.
2. To make the dressing, combine the mayonnaise, lemon juice, garlic, white wine vinegar, dijon, anchovies, and Worcestershire sauce in a blender. Blitz until smooth.
3. Pour dressing over the brussel sprouts.
4. Top with ribbons of parmesan, bacon bits, roasted chicken, croutons or whatever you'd like. Toss to combine and enjoy!
