Best Ever Paleo Pizza

Pizza is one of our favourite, easy dinners. We’ll often do pizza night on Fridays and pour a glass of wine, make our dough, and decorate our pizza with whatever toppings we’re craving. Topher is generally in charge of grating cheese while I make the dough. This pizza dough gets baked naked first and then I take it out of the oven when it’s starting to go golden brown. At that point we’ll decorate it.

The options for pizza toppings are really limitless, I love a classic Margherita pizza with mozzarella, tomato sauce, and basil. My all-time favourite pizza is grilled chicken, zucchini, sliced garlic and feta or goat cheese. I can’t explain it, but it’s so darn delicious. This paleo pizza crust really is perfect, especially if you like a thin crust pizza. We’ve had A LOT of gluten-free pizza in our day, we’ve tried cauliflower crust, we’ve tried frozen gluten-free crusts and pizzas, and we’ve made a number of different pizza crusts from blogs. I have to say, this BY FAR the easiest pizza crust and the yummiest gluten-free, grain-free crust.

This crust is also perfect as a flatbread with caramelized onions, apples, and swiss cheese or spinach and goat cheese. Simply make a double batch of this crust and shape it into few long rectangular flatbread crusts and then chop the flatbreads up into smaller pieces and it’s the best appetizer or movie night snack!

7 Reasons this is the Best Pizza Crust Ever: 

  1. The base of this crust is ground almonds which means a source of satiating protein, good fats and very low on the glycemic index.

  2. Almonds are full of antioxidant-rich vitamin E and stress-busting magnesium.

  3. It’s full of flavour, I love adding garlic powder, sea salt, pepper, and dried Italian herbs to this crust.

  4. It holds together really well, you can slice it, pick it up and enjoy it just like regular ol' pizza!

  5. I loved it as much as I love cauliflower pizza!

  6. It’s paleo, grain-free, and gluten-free! The base of this crust is almond flour, coconut flour, and tapioca flour, which means if you’re following a paleo diet, this is the crust for you!!

  7. It’s sooo easy to make! No fancy equipment, no food processor, all you need to make this crust is a bowl and a wooden spoon or spatula. This crust comes together in just minutes and it is so easy to handle and roll out and bake!

Substitutions

If you don’t eat eggs, this crust works perfectly with a flax or chia egg. Simply mix 1 tablespoon ground flaxseed or 1 tablespoon chia seed with 3 tablespoons water, set aside for 5 minutes and then use that mixture in place of an egg.

If you are nut-free, you can use buckwheat flour instead of almond flour, please note that buckwheat flour is not grain-free but it is gluten-free! You can also substitute the almond flour with oat flour.

Best Ever Paleo Pizza

Servings: 1 8-inch pizza crust

Ingredients
1/2 cup almond flour
1/4 cup coconut flour
3/4 cup arrowroot or tapioca starch
1 egg
1 tablespoon apple cider vinegar
1/3 cup extra virgin olive oil
1/4 cup water
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
1/2 teaspoon dried Italian herbs
1/4 teaspoon black pepper
your choice of toppings

Instructions:
1. MAKE YOUR DOUGH Preheat your oven to 400ºF. In a medium-sized bowl, combine almond flour, coconut flour, and arrowroot flour. Add the garlic powder, Italian herbs, salt, and pepper and whisk together. Add the egg, vinegar, olive oil, and water and stir really well to combine. 2. On a baking sheet or pizza pan, sprinkle extra arrowroot/tapioca starch. Place your dough on the pan. Dust your hands or a rolling pin with arrowroot/tapioca starch. Roll out your dough until it's an 8ish-inch wide circle and it's about 1/4 inch thick. Prick the dough all over with a fork.
3. BAKE YOUR PIZZA Bake your pizza for 10-15 minutes or until it's starting to go golden brown around the edges. Remove from oven.
4. TOP YOUR PIZZA Add your toppings to your pizza and then bake for another 5-8 minutes or until the toppings are hot and if you're using cheese, the cheese it golden brown. Remove from oven, slice into pieces and serve!
